How to Make African Chicken Peanut Soup
- Heat 2 tablespoons of sesame oil in a large pot over medium-high heat. Add 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes, 1 medium onion (chopped), and 2 cloves garlic (minced). Saute for 10 minutes, or until chicken is lightly browned and onion is tender.
- Stir in 2 tablespoons curry powder, 1 teaspoon salt, 1/2 teaspoon black pepper, and 1/2 - 1 teaspoon red pepper flakes (adjust to your spice preference). Saute for 1 minute more, until fragrant.
- Pour in 4 cups chicken broth, 2 tablespoons tomato paste, 1 (14.5 ounce) can of stewed tomatoes (undrained), and 1/2 cup creamy peanut butter. Stir until smooth and well combined.
- Bring the soup to a simmer, then reduce heat to low and cook for 5 minutes, or until heated through. Do not boil.
