Ingredients for Angel Hair Fresca

  • 8 ounces angel hair pasta
  • Fresh Broccoli Florets
  • 2 tablespoons butter
  • Sun Dried Tomato Pesto

How to Make Angel Hair Fresca

  1. Bring 4 cups of salted water to a rolling boil in a large pot.
  2. Add 8 ounces of angel hair pasta to the boiling water.
  3. Cook for 1 minute, stirring occasionally.
  4. Add 1 cup of broccoli florets to the pot and continue boiling for 4 minutes, stirring occasionally, until the pasta and broccoli are tender-crisp.
  5. Drain the pasta and broccoli thoroughly, reserving about 1/4 cup of pasta water.
  6. While still hot, add 2 tablespoons of butter to a large saucepan. Let the residual heat melt the butter completely.
  7. Stir in 1/2 cup of pesto and the cooked pasta and broccoli. Add a tablespoon or two of the reserved pasta water if needed to create a creamy sauce.
  8. Toss everything together to coat evenly. Serve immediately and enjoy!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
