- ½ cup water
- ¼ cup brown sugar
- Unsalted Butter
- Fresh Cilantro
- Fresh Ginger
- Jalapeno
- Fresh Lime Juice
How to Make Another Great Gingered Sweet Potatoes
- Peel and cube 2 pounds of sweet potatoes.
- In a medium saucepan, combine the cubed sweet potatoes with 1 cup of coconut milk, ½ cup of water, and ¼ cup of brown sugar. Bring to a simmer over medium heat.
- Cook for 15-20 minutes, or until the sweet potatoes are tender. The coconut milk will reduce as the potatoes cook.
- Mash the sweet potatoes gently by hand, leaving some chunks for texture.
- Stir in 2 tablespoons of unsalted butter.
- In a food processor, combine ½ cup of packed fresh cilantro, 2 tablespoons of grated fresh ginger, 1 jalapeño pepper, seeded and roughly chopped, and the juice of 1 lime. Pulse until finely minced, scraping down the sides as needed.
- Stir the cilantro mixture into the mashed sweet potatoes along with ½ teaspoon of salt (or to taste).
- Serve warm and enjoy!
