- 2 slices sourdough bread

How to Make Anthony S Garlic Prawns
- Preheat oven to 180°C (350°F).
- Remove crusts from 2 slices of sourdough bread. Tear bread into pieces and pulse in a food processor until you have coarse breadcrumbs.
- Spread breadcrumbs on a small baking sheet. Bake for 5 minutes, stir, then bake for another 5 minutes, or until dry but not browned. Set aside to cool.
- Heat 2 tablespoons of olive oil in a large frying pan over medium-high heat. Add 2 cloves minced garlic and 1/2 a finely chopped red chili (remove seeds for less heat). Cook, stirring, for 30 seconds.
- Add 250g (about 1 cup) of peeled and deveined prawns. Cook, turning, for 4 minutes, or until pink and cooked through.
- Stir in the breadcrumbs, 2 tablespoons of chopped fresh basil, and cook for 1 minute, until combined and coated. Season with salt and pepper to taste.
- Serve immediately with crusty bread and lemon wedges.
