- Flour Tortillas
- Cheddar Cheese
- Banana Pepper
- Red Bell Pepper
- 4 ounces cream cheese, softened
How to Make Antijitoes
- In a medium bowl, combine 4 ounces of softened cream cheese with 1/2 cup of chopped bell peppers (any color or a mix!).
- Spread 1-2 tablespoons of the cream cheese mixture evenly onto each of 6-8 small flour tortillas.
- Sprinkle 1/2 cup of shredded Mexican cheese blend over the cream cheese layer on each tortilla.
- Fold in the sides of each tortilla, then tightly roll from the bottom up to create a pinwheel shape.
- Cut each pinwheel diagonally into 4-5 pieces.
- Place the Antijitoes on a lightly greased baking sheet. Bake at 350°F (175°C) for 12-15 minutes, or until lightly golden brown and heated through.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
