How to Make Apple Charlottes

  1. Preheat oven to 180°C (350°F).
  2. Brush six 1-cup capacity ovenproof dishes with melted butter.
  3. In a medium saucepan, combine 1kg peeled, cored, and sliced apples, 100g brown sugar, 1 teaspoon ground cinnamon, and 50ml water.
  4. Cook over medium heat, stirring occasionally, until apples are tender (about 10-15 minutes).
  5. Drain the apples well and let them cool completely.
  6. Using a 7cm biscuit cutter, cut 12 rounds from 6 slices of bread. Use remaining bread for sides.
  7. Cut remaining bread slices into 2cm wide fingers.
  8. Trim bread fingers to fit the height of each ovenproof dish.
  9. Dip six bread rounds in melted butter and place in the base of each dish.
  10. Dip each bread finger in melted butter and press around the sides of each dish vertically, overlapping slightly.
  11. Fill each bread-lined dish with the cooked apples.
  12. Top with the remaining buttered bread rounds.
  13. Place the dishes on a baking tray.
  14. Bake for 20 minutes, or until golden brown and heated through.
  15. Carefully turn the charlottes onto plates and serve warm.
  16. Serve with your favorite jam sauce (recipe below) and a scoop of vanilla ice cream or whipped cream.
  17. **Jam Sauce:** In a small saucepan, combine 200g jam, 50ml water and 1 tbsp lemon juice.
  18. Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally, until slightly thickened.
  19. Strain the sauce through a fine-mesh sieve to remove any seeds or lumps.
  20. Serve hot.

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
