How to Make Apple Cider Brisket

  1. Preheat oven to 325°F (160°C). Position rack in the center.
  2. Heat 2 tablespoons of olive oil in a large Dutch oven or roasting pan over medium-high heat.
  3. Season a 3-4 lb brisket with salt and pepper. Sear the brisket for 4 minutes per side, until browned.
  4. Remove brisket and set aside.
  5. Add 1 large onion, chopped, to the pot and cook until softened, about 5 minutes.
  6. Return brisket to the pot. Add 2 cups apple cider, 1/4 cup molasses, 2 cloves garlic (minced), 1 tablespoon fresh rosemary (or 1/8 teaspoon ground ginger), and 1 tablespoon fresh thyme (or 1/8 teaspoon ground allspice and 2 bay leaves).
  7. Add more apple cider if needed, ensuring the brisket is almost submerged.
  8. Bring to a simmer, cover tightly, and bake for 3 hours, or until fork-tender.
  9. Remove from oven and let cool completely in the pot.
  10. Cover and refrigerate overnight.
  11. The next day, skim off any hardened fat from the cooking liquid.
  12. Transfer the brisket to a carving board and slice thinly against the grain.
  13. Bring the cooking liquid to a boil over high heat. Simmer for a few minutes to reduce and concentrate flavors (optional).
  14. Season with salt and pepper to taste.
  15. Return the sliced brisket to the cooking liquid. Simmer over medium-low heat until heated through.
  16. Serve hot, spooning the delicious sauce over the brisket and alongside the braised onions.
