  • 50g unsalted butter
  • Light Brown Sugar
  • 2 tablespoons honey
  • Porridge Oats

How to Make Banana Flapjacks

  1. Preheat your oven to 190°C (375°F/Gas Mark 5).
  2. Line a 9-inch square baking tin with parchment paper.
  3. In a saucepan over low heat, melt 50g butter, 75g light brown sugar, and 2 tablespoons honey, stirring constantly until the sugar dissolves completely.
  4. Remove from heat and stir in 175g rolled oats, 1 medium mashed ripe banana (about 120g), 50g chopped walnuts (optional), 1 teaspoon ground cinnamon and a pinch of salt. Mix well to combine all ingredients.
  5. Pour the batter into the prepared baking tin and spread evenly.
