- ¼ cup egg substitute (or 1 large egg)
- Nonfat Plain Yogurt
- 2 teaspoons baking powder
- 2 tablespoons orange juice

- Tart Apples

How to Make Apple Pancakes With Cinnamon Nonfat Yogurt
- In a large bowl, whisk together the flour, egg substitute, 1 cup of yogurt, baking powder, orange juice, and 2 tablespoons of maple syrup until just combined. Do not overmix.
- If desired, add 2-4 tablespoons of water to the batter for thinner pancakes.
- Let the batter rest for 30 minutes.
- While the batter rests, heat a lightly oiled nonstick skillet or griddle over medium heat.
- In a separate small pan, sauté the sliced apples with 1 tablespoon of water until tender and caramelized (about 5-7 minutes).
- In a small bowl, combine the remaining ¼ cup yogurt, remaining 2 tablespoons maple syrup and 1 teaspoon cinnamon.
- Pour ¼ cup of batter onto the hot skillet for each pancake. Cook for 1-2 minutes per side, or until golden brown and cooked through.
- Repeat with remaining batter.
- For each serving, place two pancakes on a plate. Top each with 2 tablespoons of the sautéed apples.
- Dollop with the cinnamon yogurt mixture and garnish with a fresh mint leaf. Serve immediately and enjoy!
