Ingredients for Apple Quince Pie

  • Pastry For Double Crust Pie
  • 4 medium apples (such as Granny Smith or Honeycrisp), peeled, cored, and sliced
  • Quinces
  • 1 cup granulated sugar
  • Green Chili Peppers
  • Dark Rum
  • Vanilla
  • Salt
  • Flour
  • 2 tablespoons unsalted butter, melted

How to Make Apple Quince Pie

  1. Preheat oven to 450°F (232°C).
  2. Roll out one half of the pie crust and gently place it into a 9-inch pie dish. Trim and crimp the edges.
  3. In a large bowl, combine the sliced apples, diced quinces, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, and allspice. Gently toss to coat.
  4. Stir in the lemon juice.
  5. Pour the fruit mixture into the prepared pie crust.
  6. Drizzle the melted butter evenly over the filling.
  7. Roll out the remaining pie crust and place it over the filling. Crimp the edges to seal, and cut several slits in the top crust to allow steam to escape.
  8. Place the pie on a baking sheet to catch any drips.
  9. Bake for 10 minutes at 450°F (232°C).
  10. Reduce oven temperature to 375°F (190°C).
  11. Continue baking for 45-50 minutes, or until the crust is golden brown and the filling is bubbly. If the crust browns too quickly, cover the edges with aluminum foil.
  12. Let the pie cool completely on a wire rack before slicing and serving. Enjoy!

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
