How to Make Apricot Glazed Chicken Breasts
- Preheat your broiler.
- Line a broiler pan with aluminum foil.
- Lightly spray the broiler pan rack with nonstick cooking spray.
- In a small bowl, whisk together 1/4 cup apricot preserves (or marmalade), 1 tablespoon ketchup, 1 tablespoon apple cider vinegar, and 1/4 teaspoon Tabasco sauce (optional).
- Season both sides of the chicken breasts generously with 1/2 teaspoon dried thyme, salt, and pepper to taste.
- Place the chicken breasts, skin-side down, on the prepared broiler pan. Broil 4-6 inches from the heat for 5 minutes.
- Flip the chicken breasts and broil for another 3 minutes.
- Brush each chicken breast with half of the apricot glaze. Broil for 1-2 minutes, or until the glaze is bubbly and the chicken is no longer pink in the thickest part.
- Turn the chicken breasts and brush with the remaining glaze. Broil for 1 minute more.
- Remove from the broiler and let rest for 2-3 minutes before serving. Serve immediately with rice and your favorite steamed vegetables.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
