Ingredients for Apricot Rice Puddings

  • Short Grain Rice
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • Dried Apricots
  • Preserved Gingerroot

How to Make Apricot Rice Puddings

  1. Rinse 1 cup of long-grain rice under cold water until the water runs clear.
  2. Combine the rinsed rice and 2 cups of cold water in a medium saucepan. Bring to a boil over high heat.
  3. Reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed and the rice is tender.
  4. Stir in 2 tablespoons of honey and 1 teaspoon of ground cinnamon.
  5. Lightly grease 4 ramekin dishes (approximately 6-ounce capacity).
  6. Combine 1 cup of dried apricots and 1 tablespoon of grated fresh ginger in a food processor. Process until a smooth paste forms.
  7. Divide the apricot paste into 4 equal portions. Shape each portion into a flat round to fit the bottom of a ramekin.
  8. Divide half of the cooked rice evenly among the prepared ramekins. Top each with an apricot paste round.
  9. Cover the apricot paste with the remaining rice.
  10. Carefully place the ramekins in a steamer basket set over a pot of simmering water. Cover and steam for 30 minutes, or until the puddings are set and firm.
  11. Remove the ramekins from the steamer and let them stand for 5 minutes before serving.
  12. Carefully invert the puddings onto warm serving plates. Drizzle with additional honey, if desired.
  13. Serve immediately or chill and serve cold with a scoop of vanilla ice cream. Enjoy!

Chef's Tip for Extra Flavor

Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
