How to Make Apricot Rice Puddings
- Rinse 1 cup of long-grain rice under cold water until the water runs clear.
- Combine the rinsed rice and 2 cups of cold water in a medium saucepan. Bring to a boil over high heat.
- Reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed and the rice is tender.
- Stir in 2 tablespoons of honey and 1 teaspoon of ground cinnamon.
- Lightly grease 4 ramekin dishes (approximately 6-ounce capacity).
- Combine 1 cup of dried apricots and 1 tablespoon of grated fresh ginger in a food processor. Process until a smooth paste forms.
- Divide the apricot paste into 4 equal portions. Shape each portion into a flat round to fit the bottom of a ramekin.
- Divide half of the cooked rice evenly among the prepared ramekins. Top each with an apricot paste round.
- Cover the apricot paste with the remaining rice.
- Carefully place the ramekins in a steamer basket set over a pot of simmering water. Cover and steam for 30 minutes, or until the puddings are set and firm.
- Remove the ramekins from the steamer and let them stand for 5 minutes before serving.
- Carefully invert the puddings onto warm serving plates. Drizzle with additional honey, if desired.
