How to Make Arugula Salad With Shaved Manchego

  1. In a large bowl, whisk together 2 tablespoons of honey and 1 tablespoon of balsamic vinegar until well combined.
  2. Whisk in 3 tablespoons of extra virgin olive oil.
  3. Season generously with salt and freshly ground black pepper.
  4. Add 5 oz of arugula, 1/4 cup of drained oil-packed sun-dried tomatoes, and 1/4 cup of toasted slivered almonds to the bowl.
  5. Gently toss to coat the arugula with the dressing.
