Ingredients for Asian Garlic Butter Noodles
- Egg Noodles
- Scallion
- Garlic Cloves
- 1 tablespoon brown sugar
- 1 tablespoon Maggi seasoning (or soy sauce)
- 1 tablespoon oyster sauce
- 4 tablespoons unsalted butter
How to Make Asian Garlic Butter Noodles
- Cook 8 oz of dried noodles (spaghetti, linguine, or fettuccine) according to package directions in a large pot of boiling salted water. Drain the noodles, reserving about 1/2 cup of the cooking water.
- While the noodles cook, prepare the sauce: In a clean wok or large skillet, melt 4 tablespoons of unsalted butter over medium-high heat.
- Add 2 thinly sliced stalks of green onion and 4 minced cloves of garlic to the melted butter. Fry for 1 minute, or until fragrant, being careful not to burn the garlic.
- Stir in 1 tablespoon of brown sugar, 1 tablespoon of Maggi seasoning (or soy sauce), and 1 tablespoon of oyster sauce. Cook for 30 seconds, until the sauce is slightly thickened.
- Add the drained noodles to the sauce. Toss vigorously to coat the noodles evenly. Add a little reserved pasta water if needed to loosen the sauce.
- Serve immediately, garnished with extra green onions if desired.
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
