  • Heavy Cream

How to Make Atkin S Almond Flan Low Carb

  1. Preheat oven to 350°F (175°C). Pour boiling water into a roasting pan until it's about halfway full.
  2. In a blender, combine 4 large egg yolks, 2 large whole eggs, 1 cup heavy cream, 1/4 cup water, 1/4 cup erythritol (or your preferred sugar substitute), and 1 teaspoon almond extract. Blend until completely smooth and creamy.
  3. Pour the mixture into a 1-quart shallow baking dish.
  4. Carefully place the baking dish into the roasting pan filled with hot water (water bath). Bake for 30-35 minutes, or until a knife inserted into the center comes out clean.
  5. Lightly spray a piece of plastic wrap with cooking spray. Cover the flan and let it cool slightly in the water bath.
  6. Once cooled, remove the flan from the water bath, cover with the sprayed plastic wrap, and refrigerate for at least 3 hours to allow it to set completely.
  7. Before serving, garnish with 1/4 cup chopped almonds.
