How to Make Bacon And Tomato Jam

  1. Cook 1/2 pound of bacon in a large skillet over medium-high heat until crispy, about 5-7 minutes.
  2. Transfer the bacon to paper towels to drain excess grease, blotting dry with additional paper towels as needed. Crumble the bacon and set aside.
  3. In a large saucepan, combine 2 pounds ripe tomatoes (diced), 1/2 medium yellow onion (finely chopped), 1 cup granulated sugar, 1/2 cup cider vinegar, 1 teaspoon salt, and 1/2 teaspoon black pepper.
  4. Bring the mixture to a boil over medium-high heat, stirring frequently. Reduce heat to medium-low.
