- 2 croissants, sliced in half
- Chive & Onion Cream Cheese
- 2 large eggs
- Salt and pepper to taste
- 4 slices bacon, cooked and crumbled (approximately 4 ounces)
How to Make Bacon Chive Brunchwich
- Preheat oven to 350°F (175°C).
- Slice croissants, bagels, or English muffins in half.
- Spread 2 tablespoons of cream cheese evenly on the cut sides of each bottom half.
- In a bowl, whisk together 2 large eggs with a pinch of salt and pepper.
- Spoon 2 tablespoons of the egg mixture onto each bottom half of the bread.
- Top each with 2 slices (approx. 2 ounces) of cooked bacon and 1 tablespoon of chopped fresh chives.
- Place the top halves of the bread on to complete the sandwich.
- Bake for 8-10 minutes, or until the cheese is melted and the bread is lightly toasted. Alternatively, you can cook the sandwiches in a skillet over medium heat for 3-5 minutes per side, or until golden brown and the cheese is melted.
