How to Make Bacon Egg And Cheese Biscuit

  1. Preheat oven to 425°F (220°C).
  2. Spray a 6-cup muffin tin with non-stick cooking spray.
  3. In a medium bowl, whisk together 6 large eggs and 2 tablespoons milk.
  4. Season with salt and pepper to taste.
  5. Evenly divide the egg mixture among the muffin tin cups.
  6. Bake for 8-10 minutes, or until eggs are set.
  7. Immediately sprinkle with 1/2 cup shredded cheddar cheese (or your favorite cheese).
  8. Remove from oven and let cool completely in the muffin tin.
  9. While eggs cool, split the 6 biscuits in half.
  10. Place 1 slice of Canadian bacon on each biscuit bottom.
  11. Once the eggs are cool, place one egg on top of each slice of bacon.
  12. Top with the remaining biscuit halves.
  13. Wrap each sandwich individually in foil and freeze until ready to enjoy.
  14. To reheat: Remove from freezer and place in the refrigerator overnight. In the morning, remove foil, wrap in a paper towel, and microwave at 70% power for 1-2 minutes, turning halfway through. Microwave times may vary.
