How to Make Bacon Koftas

  1. Preheat your grill or large skillet to medium-high heat.
  2. In a food processor, combine 4 slices (about 100g) of cooked bacon, crumbled; 1/2 cup (60g) breadcrumbs; 2 spring onions, finely chopped; 1/4 cup (15g) chopped fresh parsley; 1 teaspoon lemon zest; 1 egg white; and a pinch of freshly ground black pepper.
  3. Process until the mixture is finely chopped and well combined, scraping down the sides as needed. The mixture should hold together when squeezed.
  4. Soak 8 bamboo skewers in water for at least 30 minutes.
  5. Divide the mixture into 8 equal portions. Shape each portion around a soaked bamboo skewer into a long oval kofta.
