How to Make Asian Salmon Roll Ups
- Drain one 11-ounce can of mandarin oranges, reserving 2 tablespoons of the juice.
- Finely chop enough mandarin oranges to measure 1/2 cup. Reserve the remaining oranges for another use (salad, garnish, etc.).
- Place 1 cup cooked salmon (flaked or chopped) in a medium bowl.
- Add 2 tablespoons chopped green onions, 2 tablespoons peanut butter, 1 tablespoon soy sauce, 1 tablespoon lemon juice, 1 clove minced garlic, and 1 teaspoon grated ginger.
- Gently mix all ingredients until well combined.
- Spoon approximately 1/4 cup of the salmon mixture onto each of 4 large flour tortillas.
- Wrap the tortillas tightly and serve immediately.
- In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons reserved mandarin orange juice, and 1 tablespoon rice vinegar.
