- In a ziplock bag, combine 2 tablespoons lime juice, 2 green onions (finely chopped), 1 tablespoon olive oil, 1/4 cup chopped cilantro, 1 jalapeño (seeded and minced), 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
- Add 4 halibut steaks (6-8 ounces each) to the bag, seal, and gently toss to coat.
- Refrigerate for 15 minutes, turning the bag once halfway through.
- Meanwhile, cook 8 slices of bacon until cooked through but not crisp. Remove from pan and drain on paper towels.
- Remove halibut from marinade, discarding the marinade.
- Wrap two slices of bacon around each halibut steak, securing with soaked wooden toothpicks.
- Preheat grill to medium heat. Lightly spray grill racks with nonstick cooking spray.
