Ingredients for Bacon Wrapped Grilled Halibut Steaks

  • 2 tablespoons lime juice
  • 2 green onions, finely chopped
  • Vegetable Oil
  • Jalapeno Peppers
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Halibut Steaks
  • 8 slices bacon

How to Make Bacon Wrapped Grilled Halibut Steaks

  1. In a ziplock bag, combine 2 tablespoons lime juice, 2 green onions (finely chopped), 1 tablespoon olive oil, 1/4 cup chopped cilantro, 1 jalapeño (seeded and minced), 1/2 teaspoon salt, and 1/4 teaspoon black pepper.
  2. Add 4 halibut steaks (6-8 ounces each) to the bag, seal, and gently toss to coat.
  3. Refrigerate for 15 minutes, turning the bag once halfway through.
  4. Meanwhile, cook 8 slices of bacon until cooked through but not crisp. Remove from pan and drain on paper towels.
  5. Remove halibut from marinade, discarding the marinade.
  6. Wrap two slices of bacon around each halibut steak, securing with soaked wooden toothpicks.
  7. Preheat grill to medium heat. Lightly spray grill racks with nonstick cooking spray.
  8. Place halibut steaks (bacon-side down) on the grill rack. If desired, place a drip pan underneath to catch bacon drippings.
  9. Grill for 4-5 minutes per side, or until the fish flakes easily with a fork and is cooked through. Keep the grill covered.
  10. Remove toothpicks before serving.
  11. Serve immediately with mango salsa (recipe #235769) and a side salad.

Chef's Tip for Extra Flavor

Elevate your dish with simple flavor boosters! A final flourish of freshly chopped herbs can add incredible brightness, while a squeeze of lemon or lime juice right before serving can awaken all the flavors. Don't underestimate a sprinkle of quality finishing salt or a drizzle of good olive oil to make your creation shine.
