How to Make Baked Garlic Sweet Potatoes

  1. Preheat oven to 400°F (200°C).
  2. Cut the top off the garlic bulb and drizzle with 1 tablespoon of olive oil. Place cut-side up in a small oven-safe dish.
  3. Roast for 30 minutes, or until the garlic is very soft.
  4. While the garlic roasts, peel and cube 1.5 pounds of sweet potatoes and 1 pound of white potatoes.
