How to Make Baked Pate
- Preheat oven to 400°F (200°C).
- In a food processor, combine 1 cup cooked chicken, 1 cup cooked veal, 2 cloves garlic, and 1/4 cup finely chopped shallot. Process until finely ground.
- Add 1/2 cup heavy cream, 1/4 cup finely chopped fresh parsley, 1 tablespoon Dijon mustard, 1 teaspoon salt, and 1/2 teaspoon black pepper. Process until smooth and well combined.
- Gently stir in 1/4 cup grated Parmesan cheese.
- Place 2 fresh bay leaves in the bottom of a 2-cup oven-safe ramekin or terrine.
- Pour the pâté mixture into the ramekin. Arrange 2 additional bay leaves on top.
- Bake for 40-50 minutes, or until the pâté is set, pulls away from the sides, and is nicely browned on top.
- Remove from oven and let cool completely.
- Cover and refrigerate for at least 2 hours before serving. Remove bay leaves before serving (optional - they may be left on as a garnish).
