How to Make Baked Prawns With Pepper And Garlic
- Preheat your oven to 180°C (350°F).
- Rinse 500g of prawns under cold water. Carefully cut off the feelers and make a slit down the back of each prawn to remove the vein.
- Pat the prawns dry with paper towels and arrange them in a single layer in an oven-safe dish.
- In a mortar and pestle, coarsely pound 2 tablespoons of chopped fresh coriander, 1 teaspoon of black peppercorns, and 4 cloves of garlic.
- Heat 2 tablespoons of vegetable oil in a small frying pan over medium heat.
- Add the pounded coriander, pepper, and garlic mixture to the hot oil. Stir-fry for 2 minutes, or until fragrant.
- Stir in 1 tablespoon of soy sauce and 1 teaspoon of sugar. Remove from heat.
- Pour the fragrant sauce evenly over the prawns. Bake for 10-12 minutes, or until the prawn shells turn bright pink/red and the prawns are cooked through.
- Serve immediately on a beautiful platter. Garnish with extra coriander (optional) and enjoy!
Chef's Tip for Extra Flavor
Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
