How to Make Baked Prawns With Pepper And Garlic

  1. Preheat your oven to 180°C (350°F).
  2. Rinse 500g of prawns under cold water. Carefully cut off the feelers and make a slit down the back of each prawn to remove the vein.
  3. Pat the prawns dry with paper towels and arrange them in a single layer in an oven-safe dish.
  4. In a mortar and pestle, coarsely pound 2 tablespoons of chopped fresh coriander, 1 teaspoon of black peppercorns, and 4 cloves of garlic.
  5. Heat 2 tablespoons of vegetable oil in a small frying pan over medium heat.
  6. Add the pounded coriander, pepper, and garlic mixture to the hot oil. Stir-fry for 2 minutes, or until fragrant.
  7. Stir in 1 tablespoon of soy sauce and 1 teaspoon of sugar. Remove from heat.
  8. Pour the fragrant sauce evenly over the prawns. Bake for 10-12 minutes, or until the prawn shells turn bright pink/red and the prawns are cooked through.
  9. Serve immediately on a beautiful platter. Garnish with extra coriander (optional) and enjoy!
