How to Make Baked Tortellini With Italian Sausage

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, brown 1 lb Italian sausage until cooked through. Break it up with a spoon as it cooks.
  3. Drain off excess grease and set the sausage aside.
  4. In the same skillet, sauté 1 medium onion, chopped, and 1 medium zucchini, chopped, for about 3 minutes until softened.
  5. Stir in 28 oz (794g) canned crushed tomatoes, 1 teaspoon dried oregano, and salt and pepper to taste.
  6. Return the cooked sausage to the skillet and bring to a simmer.
  7. Pour the sausage and tomato mixture over 1 lb uncooked cheese tortellini in a large (9x13 inch) casserole dish.
  8. Sprinkle with 1 cup shredded mozzarella cheese.
  9. Bake, covered, for 10 minutes.
  10. Stir gently, sprinkle with the remaining 1 cup mozzarella cheese, and bake for another 10-15 minutes, or until the pasta is tender and the cheese is melted and bubbly.
