- 3 medium ripe bananas
- 1/2 cup fresh orange juice
- Orange

- Shredded Coconut
How to Make Banana Ambrosia
- Preheat oven to 350°F (175°C).
- Spray a 9-inch pie plate with nonstick cooking spray.
- Peel the bananas and cut each in half crosswise. Then, cut each half into quarters lengthwise.
- In a small bowl, combine 1/4 cup of the orange juice. Dip each banana piece into the orange juice to coat lightly.
- Arrange the banana pieces in the prepared pie plate.
- In a separate small bowl, whisk together the remaining 1/4 cup orange juice, the diced orange, and brown sugar until the sugar dissolves.
- Pour the orange mixture evenly over the bananas in the pie plate.
- Bake for 5-7 minutes, or until the bananas are soft and the glaze is bubbly.
- Remove from oven and let cool slightly.
- Just before serving, sprinkle generously with shredded coconut.
