Ingredients for Banana Ambrosia

  • 3 medium ripe bananas
  • 1/2 cup fresh orange juice
  • Orange
  • Dark Brown Sugar
  • Shredded Coconut

How to Make Banana Ambrosia

  1. Preheat oven to 350°F (175°C).
  2. Spray a 9-inch pie plate with nonstick cooking spray.
  3. Peel the bananas and cut each in half crosswise. Then, cut each half into quarters lengthwise.
  4. In a small bowl, combine 1/4 cup of the orange juice. Dip each banana piece into the orange juice to coat lightly.
  5. Arrange the banana pieces in the prepared pie plate.
  6. In a separate small bowl, whisk together the remaining 1/4 cup orange juice, the diced orange, and brown sugar until the sugar dissolves.
  7. Pour the orange mixture evenly over the bananas in the pie plate.
  8. Bake for 5-7 minutes, or until the bananas are soft and the glaze is bubbly.
  9. Remove from oven and let cool slightly.
  10. Just before serving, sprinkle generously with shredded coconut.
  11. Serve warm or chilled. Enjoy!
