How to Make Baked Apricot Orange Chicken
- Preheat oven to 375°F (190°C).
- Place 4 bone-in, skin-on chicken breasts (about 2 lbs total) in a 9x13 inch baking dish, skin side up. Season generously with 1 tsp salt, 1/2 tsp black pepper, and 1 tsp ground ginger.
- Spread 1/2 cup orange marmalade evenly over the chicken breasts.
- Pour 1/4 cup orange juice and 1/4 cup chicken broth into the bottom of the baking dish.
- Bake for 20 minutes.
- Remove from oven and add 1 cup dried apricots, distributed evenly over the chicken.
- Sprinkle 2 tablespoons brown sugar over the apricots and chicken. Return to the oven and bake for 40 minutes, basting with pan juices every 15 minutes.
