How to Make Banana Bread Yeast Risen

  1. Preheat oven to 375°F (190°C). Grease two 9x5 inch loaf pans.
  2. In a large bowl, whisk together 1 ¼ cups (150g) all-purpose flour, ½ cup (100g) granulated sugar, 1 teaspoon salt, and 2 ¼ teaspoons (1 packet) active dry yeast.
  3. In a small saucepan, heat 1 cup (240ml) evaporated milk, ½ cup (120ml) water, and ¼ cup (57g) unsalted butter or margarine until 120-130°F (49-54°C).
  4. Add the warm milk mixture to the dry ingredients.
  5. Beat with an electric mixer on medium speed for 2 minutes.
  6. Add 2 large eggs, 3 ripe mashed bananas (about 1 ½ cups), and 1 cup (120g) all-purpose flour.
  7. Beat on high speed for 2 minutes.
  8. Stir in 1 cup (100g) chopped pecans and enough remaining flour (about ½ cup) to form a stiff dough.
  9. Turn dough out onto a lightly floured surface and knead for 8-10 minutes until smooth and elastic.
  10. Place dough in a lightly greased large bowl, turning to coat. Lightly grease the top of the dough. Cover the bowl with plastic wrap.
  11. Let rise in a warm place until doubled in size (about 1-1.5 hours).
  12. Punch down the dough and divide it in half.
  13. Shape each half into a loaf and place into the prepared loaf pans.
  14. Cover loaves loosely with plastic wrap and let rise until doubled in size (about 45-60 minutes).
  15. In a small bowl, mix ¼ cup (50g) granulated sugar and 1 teaspoon ground cinnamon.
  16. Once doubled, remove plastic wrap. Brush loaves lightly with melted butter and sprinkle generously with the cinnamon-sugar mixture.
  17. Bake for 25-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  18. Let cool in pans for 10 minutes before transferring to a wire rack to cool completely.
