Ingredients for Banana Drop Scones

  • Self Raising Flour
  • Free Range Egg
  • Milk
  • Vegetable Oil
  • 2 tablespoons butter
  • Caster Sugar
  • Double Cream
  • 1 ripe banana, sliced

How to Make Banana Drop Scones

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together 1 ½ cups all-purpose flour, 2 teaspoons baking powder, ½ teaspoon baking soda, ¼ teaspoon salt, and 2 tablespoons granulated sugar.
  3. In a separate bowl, whisk together 1 cup buttermilk, 1 large egg, and 1 teaspoon vanilla extract.
  4. Gently fold the wet ingredients into the dry ingredients until just combined. Do not overmix.
  5. Heat ¼ cup vegetable oil in a large non-stick skillet or griddle over medium heat.
  6. Drop spoonfuls of batter onto the hot skillet, leaving space between each scone.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through.
  8. While the scones are cooking, prepare the caramelized bananas: Melt 2 tablespoons butter in a medium saucepan over medium heat.
  9. Add ¼ cup granulated sugar and cook for 2 minutes, stirring constantly, until golden brown.
  10. Stir in 2 tablespoons heavy cream and 1 ripe banana, sliced into ½-inch thick pieces. Cook for 1 minute, or until the bananas are softened and coated in caramel.
  11. Serve the warm drop scones immediately, topped with the caramelized bananas. Enjoy!

Chef's Tip for Extra Flavor

Small additions can make a big impact! Try a sprinkle of fresh herbs, a dash of your favorite spice blend, or a squeeze of citrus just before serving to really enhance the flavors of your dish.
