Ingredients for Banana Marshmallow Squares

  • Yellow Cake Mix
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3 large eggs
  • 1/2 cup chopped walnuts or pecans (optional)
  • Mini Marshmallows
  • Vanilla Instant Pudding Mix
  • Mashed Bananas

How to Make Banana Marshmallow Squares

  1. Preheat oven to 350°F (175°C).
  2. Grease and flour an 11x7 inch baking pan.
  3. In a large bowl, combine 1 box (15.25 oz) yellow cake mix, 1/2 cup (1 stick) melted unsalted butter, and 3 large eggs.
  4. Beat with an electric mixer until well combined.
  5. Stir in 1/2 cup chopped walnuts or pecans (optional).
  6. Press half of the cake mixture into the bottom of the prepared baking pan using your hands or the back of a slightly wet spoon.
  7. Set aside the remaining cake mixture for the topping.
  8. In a microwave-safe bowl or double boiler, melt 1 (10 oz) bag of marshmallows, stirring constantly until completely smooth. (Microwave in 30-second intervals, stirring after each).
  9. Add 1 (3.4 oz) box instant vanilla pudding mix and 2 ripe bananas, mashed, to the melted marshmallows.
  10. Mix until thoroughly combined.
  11. Spread the marshmallow mixture evenly over the cake batter in the pan.
  12. Crumble the remaining cake batter evenly over the filling using wet hands.
  13. Bake for 25-30 minutes, or until the top is golden brown and the center is set. (If using a 13x9 inch pan, baking time may need to be increased).
  14. Let cool completely before cutting into squares.

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
