Ingredients for Bananas Managua

  • 3 ripe bananas, peeled and sliced 1/4 inch thick diagonally
  • 1/4 cup freshly squeezed orange juice
  • 2 tablespoons packed light brown sugar
  • Ground Cinnamon
  • 1 tablespoon unsalted butter
  • Limes
  • 2 tablespoons sour cream, for serving

How to Make Bananas Managua

  1. In a small, shallow bowl, pour the orange juice.
  2. In another small bowl, mix the brown sugar and cinnamon.
  3. Melt the butter in a small frying pan over medium heat.
  4. Dip each banana slice into the orange juice, then dredge in the brown sugar mixture, ensuring it's evenly coated.
  5. Add the coated banana slices to the frying pan in a single layer. Cook until lightly browned and glazed on both sides, about 2-3 minutes per side.
  6. Transfer the cooked bananas to 2 small dessert dishes.
  7. Repeat steps 4 and 5 with the remaining banana slices.
  8. Once all bananas are cooked, add the lime juice and any remaining orange juice and brown sugar mixture to the pan.
  9. Cook over medium heat, stirring constantly, until the mixture boils and thickens into a syrupy consistency, about 1-2 minutes.
  10. Pour the syrup evenly over the bananas in the dessert dishes.
  11. Top each serving with a dollop of sour cream.
  12. Serve immediately and enjoy your taste of Nicaragua!

Chef's Tip for Extra Flavor

Want to unlock deeper, more complex flavors? Try toasting your whole spices before grinding them, or blooming ground spices in a little warm oil to enhance their aroma. Deglazing your pan with a bit of stock, wine, or even water after browning ingredients can capture those tasty caramelized bits, adding richness to your dish.
