- 1 cup pearl barley
- 2 tablespoons margarine

How to Make Barley Pilaf
- Preheat oven to 350°F (175°C).
- Melt 2 tablespoons of margarine in a large oven-safe skillet or casserole dish over medium heat.
- Add 1 medium onion, chopped, and sauté until softened and lightly browned (about 5 minutes).
- Add 8 ounces of sliced mushrooms and sauté for another 3-5 minutes until softened.
- Stir in 1 cup of pearl barley, 2 cups of chicken broth, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Cover the casserole dish tightly with a lid or aluminum foil.
- Bake in the preheated oven for 50-60 minutes, or until the barley is tender and the liquid is absorbed. Check halfway through and stir gently if needed.
- Remove from oven and let stand for 5-10 minutes before fluffing with a fork and serving.
