How to Make Barley With Shiitakes And Spinach

  1. Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat.
  2. Add 1 medium chopped onion, 1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped), and 2 minced cloves of garlic.
  3. Sauté for 3 minutes, or until the onion is tender and translucent.
  4. Add 8 ounces of sliced shiitake mushrooms and sauté for 6 minutes, or until tender and slightly browned.
  5. Stir in 1 cup of pearl barley, 1/3 cup of water, and 1 cup of beef or vegetable consommé.
  6. Bring the mixture to a boil.
  7. Reduce heat to low, cover, and simmer for 10-15 minutes, or until the barley is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  8. Stir in 5 ounces of roughly chopped fresh spinach and 1/4 cup of grated Parmesan cheese.
  9. Cook for 2-3 minutes, or until the spinach wilts and is tender, stirring frequently.
