- Quick Cooking Barley
- 1/3 cup water
- Beef Consomme
- 5 ounces fresh spinach, roughly chopped

How to Make Barley With Shiitakes And Spinach
- Heat 1 tablespoon of olive oil in a large nonstick skillet over medium-high heat.
- Add 1 medium chopped onion, 1 teaspoon dried rosemary (or 1 tablespoon fresh, chopped), and 2 minced cloves of garlic.
- Sauté for 3 minutes, or until the onion is tender and translucent.
- Add 8 ounces of sliced shiitake mushrooms and sauté for 6 minutes, or until tender and slightly browned.
- Stir in 1 cup of pearl barley, 1/3 cup of water, and 1 cup of beef or vegetable consommé.
- Bring the mixture to a boil.
- Reduce heat to low, cover, and simmer for 10-15 minutes, or until the barley is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
- Stir in 5 ounces of roughly chopped fresh spinach and 1/4 cup of grated Parmesan cheese.
- Cook for 2-3 minutes, or until the spinach wilts and is tender, stirring frequently.
- Season generously with freshly ground black pepper to taste. Serve immediately as a side dish or a hearty vegetarian entree.
