Ingredients for Bbq Baked Pineapple
- Fresh Pineapple
- 6 tablespoons maple syrup
- 1 teaspoon dark rum (optional, or substitute with extra maple syrup)
- 3 tablespoons butter
- Whipped Cream
How to Make Bbq Baked Pineapple
- Preheat your grill to medium-high heat or oven to 375°F (190°C).
- Cut off the crown of a medium-sized pineapple (about 2 lbs) and discard.
- Without peeling, cut the pineapple lengthwise into 6 wedges.
- Remove the core from each pineapple wedge.
- Using a serrated knife, carefully loosen the pineapple flesh from the outer rind, making almost-through cuts crosswise into smaller wedges (about 2 inches wide), but leave the rind intact.
- Place each pineapple wedge on a 12-inch square piece of heavy-duty aluminum foil.
- Drizzle each wedge with 1 tablespoon of maple syrup.
- Sprinkle 1 teaspoon of dark rum (or substitute with extra maple syrup) over each wedge.
- Dot each wedge with 1/2 tablespoon of butter.
- Fold up the foil, sealing loosely to allow for steam to escape.
- If grilling, place foil packets directly on the grill grates. If baking, place foil packets on a baking sheet.
- Bake or grill for 30-40 minutes, or until the pineapple is very hot, bubbly, and caramelized.
- Serve immediately, topped with whipped cream or a scoop of vanilla ice cream.
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
