  1. Preheat your grill to medium-high heat or oven to 375°F (190°C).
  2. Cut off the crown of a medium-sized pineapple (about 2 lbs) and discard.
  3. Without peeling, cut the pineapple lengthwise into 6 wedges.
  4. Remove the core from each pineapple wedge.
  5. Using a serrated knife, carefully loosen the pineapple flesh from the outer rind, making almost-through cuts crosswise into smaller wedges (about 2 inches wide), but leave the rind intact.
