How to Make Beautiful Baked Chicken Kievs

  1. Combine 1/2 cup (1 stick) softened margarine, 2 tablespoons chopped fresh parsley, 1 tablespoon chopped fresh rosemary, 2 cloves minced garlic, and 1/4 teaspoon black pepper in a small mixing bowl. Mix well.
  2. Shape the margarine mixture into 4 sticks, approximately 5cm long and 2cm wide.
  3. Freeze the margarine sticks until firm (at least 30 minutes).
  4. Place each chicken breast half between 2 sheets of waxed paper. Using a meat mallet or rolling pin, gently flatten each breast to 1/2cm thickness.
  5. Place 1 frozen margarine stick in the center of each flattened chicken breast.
  6. Fold the sides of the chicken breast over the margarine stick, then tightly roll up from the long side.
  7. Secure each end of the chicken roll with two wooden toothpicks.
  8. In a shallow dish, beat 1/4 cup milk. Dip each chicken roll in the milk, ensuring it's fully coated. Then, dredge in breadcrumbs, pressing gently to adhere.
  9. Bake in a preheated oven at 400°F (200°C) for 25-30 minutes, or until the chicken is cooked through and the breadcrumbs are golden brown.
  10. Remove toothpicks. Garnish with lemon wedges and fresh parsley. Serve immediately and enjoy!
