How to Make Beef Enchilada Bake
- Brown 1 lb ground beef in a large skillet over medium-high heat. Drain off any excess grease.
- Stir in 1 cup of your favorite salsa and 8 oz of cubed Velveeta cheese into the browned beef.
- Cook and stir over medium-low heat until the Velveeta is completely melted and the mixture is well combined.
- Preheat your oven to 350°F (175°C).
- Lay out 12 corn or flour tortillas. Spoon approximately 1/4 cup of the beef mixture down the center of each tortilla.
- Roll up the tortillas tightly and place them seam-side down in a greased 9x13 inch baking dish.
- Pour the remaining 1 cup of salsa evenly over the rolled enchiladas.
- Cover the baking dish with aluminum foil.
- Bake for 15 minutes.
- Remove the foil and sprinkle 1.5 cups of Mexican cheese blend over the enchiladas.
- Bake for an additional 15 minutes, or until the cheese is melted and bubbly and the enchiladas are heated through.
- Let stand for 5-10 minutes before serving. Garnish with sour cream and your favorite toppings (optional).
Chef's Tip for Extra Flavor
Chef's secret: layers of flavor make a dish truly memorable! Consider what a little extra something could bring – perhaps a touch of acidity like a good vinegar or citrus zest, a hint of smokiness from paprika, a bit of umami from mushrooms or soy sauce, or a sprinkle of toasted nuts for texture. Experiment and taste as you go!
