How to Make Beefy Spinach And Rice

  1. Preheat oven to 375°F (190°C).
  2. In a large microwave-safe bowl, combine 1 cup long-grain rice, ½ cup barley, 2 tablespoons butter, and 2 cups water. Microwave on high for 25-30 minutes, or until the rice and barley are tender and the water is absorbed. Fluff with a fork.
