How to Make Beefy Spinach And Rice
- Preheat oven to 375°F (190°C).
- In a large microwave-safe bowl, combine 1 cup long-grain rice, ½ cup barley, 2 tablespoons butter, and 2 cups water. Microwave on high for 25-30 minutes, or until the rice and barley are tender and the water is absorbed. Fluff with a fork.
- While the rice cooks, brown 1 lb ground beef in a large skillet over medium-high heat. Break the beef up with a spoon as it cooks.
- Drain off any excess grease from the cooked beef. Set aside.
- Add 1 medium onion, chopped, and 2 cloves garlic, minced, to the skillet. Sauté for 5-7 minutes, or until softened and lightly caramelized.
- Stir in 1 (10.75 ounce) can condensed cream of mushroom soup, the cooked beef, cooked rice and barley mixture, 10 ounces fresh spinach (chopped), and ½ cup beef broth. Simmer for 5 minutes, stirring occasionally, until heated through and the spinach wilts.
- Pour the mixture into a greased 9x13 inch baking dish.
- If desired, top with ½ cup bread crumbs.
- Bake for 20-25 minutes, or until heated through and bubbly. Let stand for 5 minutes before serving.
