How to Make Belgian Endive Apple And Almond Salad
- Wash and thinly slice 1 large Honeycrisp apple (or your favorite variety).
- Separate 1 large head of Belgian endive and remove any tough outer leaves. Cut the endive in half lengthwise and then slice thinly.
- In a large bowl, combine the sliced apple, endive, and ½ cup slivered almonds.
- In a small bowl, whisk together 2 tablespoons apple cider vinegar, 1 tablespoon olive oil, 1 teaspoon Dijon mustard, ½ teaspoon honey, salt and pepper to taste.
- Pour the dressing over the salad and gently toss to combine.
