How to Make Bell Pepper Cream Cheese Pasta
- Cook 250g pasta according to package directions.
- While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium heat.
- Add 1 medium onion, chopped, and 1 large bell pepper (any color), chopped, and sauté for 5 minutes, until softened.
- Stir in 1 teaspoon curry powder and sauté for another 3-5 minutes, until fragrant.
- Drain the cooked pasta, reserving about ½ cup of pasta water.
- Add 4 ounces (115g) cream cheese to the skillet with the vegetables. Stir until melted and smooth.
- Add the drained pasta to the skillet and toss to coat. If the sauce is too thick, add reserved pasta water, 1 tablespoon at a time, until desired consistency is reached.
