How to Make Bell Pepper Cream Cheese Pasta

  1. Cook 250g pasta according to package directions.
  2. While pasta cooks, heat 1 tablespoon olive oil in a large skillet over medium heat.
  3. Add 1 medium onion, chopped, and 1 large bell pepper (any color), chopped, and sauté for 5 minutes, until softened.
  4. Stir in 1 teaspoon curry powder and sauté for another 3-5 minutes, until fragrant.
  5. Drain the cooked pasta, reserving about ½ cup of pasta water.
  6. Add 4 ounces (115g) cream cheese to the skillet with the vegetables. Stir until melted and smooth.
  7. Add the drained pasta to the skillet and toss to coat. If the sauce is too thick, add reserved pasta water, 1 tablespoon at a time, until desired consistency is reached.
