How to Make Bell Peppers Stuffed With Orzo Cheese

  1. Preheat oven to 400°F (200°C).
  2. Cook 1 cup orzo according to package directions, but stop cooking 1/4 of the way before the recommended time. Drain well.
  3. Cut the tops off 4 large bell peppers (any color) and remove seeds and membranes.
  4. Drizzle the inside of the peppers with 1 tablespoon olive oil. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
  5. In a bowl, combine 1/2 cup chopped Kalamata olives, 1/4 cup chopped fresh parsley, and 1/4 cup chopped walnuts or pecans.
  6. Add the cooked orzo to the olive mixture. Stir in 1 tablespoon of your favorite hot sauce (adjust to taste).
  7. Stir in 1 cup shredded mozzarella cheese and 1/2 cup shredded parmesan cheese. Spoon the orzo mixture into the prepared bell peppers.
  8. Place the stuffed peppers in a lightly oiled baking dish. Cover with foil.
  9. Bake for 20 minutes. Remove foil and bake for another 15-20 minutes, or until the peppers are tender and the cheese is melted and bubbly.
