  1. Wash and thoroughly dry 1 pound of okra. Cut lengthwise into halves and carefully scoop out the seeds.
  2. In a bowl, combine 1/2 cup finely chopped onion, 1/4 cup finely chopped cilantro, 1/4 cup finely chopped green chilies (adjust to taste), 1 teaspoon ginger paste, 1 teaspoon garlic paste, 1/2 teaspoon turmeric powder, 1 teaspoon cumin powder, 1/2 teaspoon coriander powder, 1/4 teaspoon garam masala, and salt to taste.
