How to Make Big Papa Ed S Quick And Tasty Frijoles

  1. In a large skillet, cook bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside. Reserve bacon grease in the skillet.
  2. Add chopped onion to the skillet with the bacon grease and sauté for 2 minutes, until softened.
  3. Add minced garlic and jalapeño (if using) to the skillet. Sauté with onions for another 2 minutes, until fragrant. Reduce heat if necessary to prevent burning.
  4. Add the can of pinto beans (including the liquid), 1/2 cup of water, 1 teaspoon of salt, and the cooked bacon to the skillet.
  5. Bring mixture to a full boil for 1 minute.
  6. Reduce heat to a low simmer. Do not cover the skillet.
