How to Make Bing Bars
- In a large saucepan over medium heat, combine 2 cups granulated sugar and 1 cup light corn syrup. Bring to a boil, stirring constantly to prevent scorching.
- Add 1 (10 ounce) bag of mini marshmallows. Continue to boil and stir constantly for 5 minutes until marshmallows are completely melted and the mixture is smooth.
- Remove from heat and stir in 1 cup dried tart cherries and 1 teaspoon vanilla extract.
- Pour the cherry mixture into a greased 9x13 inch baking pan and spread evenly. Let cool completely.
- While the cherry layer cools, prepare the chocolate topping. In a double boiler or heat-safe bowl set over simmering water, melt 1 (12 ounce) bag of semi-sweet chocolate chips and 1/2 cup creamy peanut butter, stirring until smooth.
- Stir in 1/2 cup chopped salted peanuts.
- Once the cherry layer is completely cool, pour the melted chocolate mixture over the top and spread evenly.
- Refrigerate for at least 2 hours, or until the chocolate is set. These freeze well for up to 3 months!
