How to Make Brazilian Mocha

  1. In the top of a double boiler (or a heat-safe bowl set over a saucepan of simmering water), combine the chopped chocolate and brewed coffee.
  2. Stir constantly over low heat until the chocolate is completely melted and smooth. Ensure the water in the bottom of the double boiler doesn't boil.
  3. Remove from heat and stir in the sea salt and sugar until dissolved.
  4. Return the double boiler to low heat and gently heat for 2-3 minutes, stirring occasionally. Do not boil.
  5. Gradually whisk in the scalded milk, stirring constantly until fully incorporated and heated through (but not boiling).
  6. Remove from heat. Using an electric mixer, beat the mixture until light and frothy (about 1 minute).
  7. Pour into four mugs or cups. Top with whipped cream, if desired, and enjoy immediately!
