How to Make Brazilian Mocha
- In the top of a double boiler (or a heat-safe bowl set over a saucepan of simmering water), combine the chopped chocolate and brewed coffee.
- Stir constantly over low heat until the chocolate is completely melted and smooth. Ensure the water in the bottom of the double boiler doesn't boil.
- Remove from heat and stir in the sea salt and sugar until dissolved.
- Return the double boiler to low heat and gently heat for 2-3 minutes, stirring occasionally. Do not boil.
- Gradually whisk in the scalded milk, stirring constantly until fully incorporated and heated through (but not boiling).
