Cajun Pulled Pork Recipe

Experience the explosion of flavor in this mouthwatering Cajun Pulled Pork recipe! Forget vinegar-based sauces – this recipe lets the rich, smoky Cajun spices shine. Made in a slow cooker for ultimate tenderness, this pulled pork is so flavorful, you might not even need BBQ sauce (though we've included a suggestion!). This recipe is perfect for a crowd, filling an 8-quart slow cooker, but easily scaled down for smaller gatherings. We highly recommend using a high-quality Cajun seasoning like Weber's, avoiding those with salt as the primary ingredient. How to Make Cajun Pulled Pork

  1. Rinse the 3 lbs of pork loin and pat it dry with paper towels.
  2. Cut the pork loin into 2-inch chunks and generously rub 6 tablespoons of Cajun seasoning onto all sides of each piece until completely covered.
  3. Melt 4 tablespoons of butter in a large (16-inch, cast iron recommended) skillet over medium-high heat. Brown the pork in batches, ensuring all sides are seared.
  4. Transfer the browned pork to your 8-quart slow cooker, leaving the flavorful butter and browned bits in the skillet.
  5. Add the 1 large chopped yellow onion and 4 minced cloves of garlic to the skillet and cook for 2-3 minutes until softened.
  6. Deglaze the skillet by pouring in 1 cup of water, scraping up all the yummy browned bits from the bottom.
  7. Pour the onion, garlic, and pan drippings into the slow cooker with the pork. Stir in 1 teaspoon of liquid smoke.
  8. Cover the slow cooker and cook on high for 5 hours or low for 8 hours, or until the pork is incredibly tender and easily shreds with a fork.
  9. Remove the pork from the slow cooker and shred it using two forks.
  10. Return the shredded pork to the slow cooker to keep it warm while you prepare the sauce (if reducing).
  11. If the pulled pork seems too watery, carefully remove some of the cooking liquid (don't throw it away!).
  12. Pour the excess liquid into a saucepan and boil it down to reduce the liquid and thicken the sauce.
  13. Once reduced, return the thickened sauce to the slow cooker with the shredded pork.
  14. Serve your delicious Cajun Pulled Pork on buns or alongside your favorite sides. Offer Sweet Baby Ray's BBQ sauce (or your preferred sauce) on the side for those who want extra flavor.
