How to Make Cajun Red Snapper

  1. In a small bowl, whisk together 1 tablespoon paprika, 1 teaspoon cayenne pepper (adjust to your spice preference), 1/2 teaspoon black pepper, 1 teaspoon onion powder, 1 teaspoon thyme, 1 teaspoon basil, 1 teaspoon garlic powder, and 1/2 teaspoon oregano.
  2. In a small saucepan, melt 2 tablespoons butter or margarine with 1 tablespoon vegetable oil over medium heat.
  3. Brush both sides of the red snapper fillets with half of the butter mixture; set aside the remaining mixture.
  4. Coat both sides of the fillets generously with the Cajun spice blend.
  5. Heat a large cast-iron skillet over high heat until a drop of water sizzles immediately upon contact.
  6. Drizzle half of the reserved butter-oil mixture into the hot skillet.
  7. Place the fillets in the skillet, butter-side down.
  8. Cook over high heat until the fish is deeply browned and crispy, about 5 minutes.
  9. Drizzle the remaining butter-oil mixture over the fish and carefully flip the fillets.
  10. Cook until the fish is cooked through, flakes easily with a fork, and is nicely browned on the other side, about 5 minutes more.
  11. Season to taste with salt.
