How to Make Candied Apples
- Wash, dry, and remove the stems from 6 medium apples. Insert a popsicle stick into the stem-end of each apple.
- In a medium, heavy-bottomed saucepan, combine 2 cups granulated sugar, 1 cup light corn syrup, 1/2 cup water, and 1 tablespoon of butter.
- Stir in 1 teaspoon vanilla extract.
- Clip a candy thermometer to the side of the pan. Cook over medium heat, stirring constantly, until the sugar dissolves completely.
- Continue cooking without stirring, and bring the mixture to a boil.
- Once boiling, add food coloring (if using). Continue boiling without stirring until the candy thermometer reaches 300°F (149°C) or a small drop of syrup forms a hard ball when dropped into a glass of ice water.
- Carefully remove the pan from the heat.
- Working quickly (the candy will harden!), dip each apple into the hot syrup, ensuring it's fully coated. Gently twirl the apple to remove excess syrup.
- Place the candied apples on wax paper or parchment paper to cool completely.
