How to Make Candied Apples

  1. Wash, dry, and remove the stems from 6 medium apples. Insert a popsicle stick into the stem-end of each apple.
  2. In a medium, heavy-bottomed saucepan, combine 2 cups granulated sugar, 1 cup light corn syrup, 1/2 cup water, and 1 tablespoon of butter.
  3. Stir in 1 teaspoon vanilla extract.
  4. Clip a candy thermometer to the side of the pan. Cook over medium heat, stirring constantly, until the sugar dissolves completely.
  5. Continue cooking without stirring, and bring the mixture to a boil.
  6. Once boiling, add food coloring (if using). Continue boiling without stirring until the candy thermometer reaches 300°F (149°C) or a small drop of syrup forms a hard ball when dropped into a glass of ice water.
  7. Carefully remove the pan from the heat.
  8. Working quickly (the candy will harden!), dip each apple into the hot syrup, ensuring it's fully coated. Gently twirl the apple to remove excess syrup.
  9. Place the candied apples on wax paper or parchment paper to cool completely.
