How to Make Carlings

  1. Soak 1 cup dried green peas overnight in cold water.
  2. Drain the soaked peas and place them in a large pan.
  3. Add 1 ½ pints (approximately 840ml) of water and bring to a boil.
  4. Reduce heat and simmer steadily for approximately 2 hours, or until the peas are very tender. Stir occasionally to prevent sticking.
  5. Remove from heat and allow the peas to cool completely.
  6. In a large bowl, mash the cooked peas slightly. Add 1 cup breadcrumbs, ½ cup finely chopped onion, 1 tablespoon chopped fresh herbs (parsley and thyme recommended), and salt and pepper to taste. Mix well to form a stiff mixture. Adjust seasoning as needed.
  7. Lightly flour your hands and shape the pea mixture into small patties, about ½ inch thick.
  8. Melt 2 tablespoons of butter in a large skillet over medium heat. Fry the patties for 3-4 minutes per side, or until they are golden brown and heated through.
  9. Serve the Carlings hot. They are delicious with your favorite dipping sauce!
  10. **Freezing Instructions:** You can freeze the cooked, mashed peas (step 5) in a freezer-safe container for up to 3 months. To cook from frozen, thaw completely, pat dry to remove any excess moisture, and proceed from step 7.
