How to Make Champagne Fruit Punch

  1. Thaw 1 (10-ounce) package frozen mixed berries (strawberries, raspberries, blueberries) at room temperature. Do not drain.
  2. Place the thawed berries and 1/2 cup of the berry juice into a blender or food processor.
  3. Add 1/4 cup granulated sugar. Cover and blend until completely smooth.
  4. To remove strawberry seeds (optional), strain the puree through a fine-mesh sieve lined with cheesecloth.
  5. Pour the pureed fruit into a 2-quart pitcher.
  6. Stir in 1 cup orange juice and 1/4 cup lemon or lime juice.
  7. Cover the pitcher and chill in the refrigerator for at least 4 hours, or preferably overnight.
  8. Just before serving, slowly stir in 1 bottle (750ml) chilled Champagne or sparkling wine (or substitute with 1 cup pineapple juice for a non-alcoholic version).
  9. Garnish each serving with a sprig of fresh rosemary or thyme and a few cranberries.
