How to Make Cherry Conserve
- Wash and pit 4 cups fresh cherries.
- Wash, thinly slice, and remove seeds from 1 large orange.
- Combine the pitted cherries, orange slices, 1/2 cup lemon juice, and 4 cups granulated sugar in a large preserving kettle or heavy-bottomed saucepan.
- Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low. Cook uncovered, stirring frequently, for approximately 45 minutes, or until the conserve has thickened and become translucent. The mixture should sheet off a spoon.
- Remove the conserve from the heat.
- Skim off any foam that has risen to the surface using a metal spoon. Stir in 1/2 cup chopped walnuts and 1/4 cup raisins. Return to medium-low heat and cook for another 10 minutes, stirring occasionally.
- Carefully ladle the hot conserve into sterilized jars, leaving 1/4 inch headspace. Seal immediately and process in a boiling water bath for 10 minutes (for pints) or 15 minutes (for quarts) for optimal shelf life. Allow jars to cool completely before checking seals.
